Coffee Talk Tuesday: When in doubt, bake it out

Hey everyone!

I hope you all had a great week. I know mine flew by and here we are for another coffee talk!

Does anyone use baking or cooking as therapy? After a long day, you’re feeling kind of blah, you come home and cook or bake your favourite treat/meal and feel instantly uplifted. The smell of a much loved comfort food fills the air and suddenly everything you were upset or worried about fades away.

That is exactly what I did yesterday. The last week was so busy and it kind of hit me yesterday afternoon as we were gearing up for another crazy week. I just felt kind of blah all day. I decided to bake away my troubles and made a peach-blueberry crisp. It was just what I needed; delicious and comforting.

Here’s the recipe if you also need to bake your worries away….



-6 peaches, peeled and sliced

-2 cups of blueberries

-2 tablespoons of all-purpose flour

-1/4 cup of sugar

-1/4 teaspoon of cinnamon

-1 1/2 tablespoons of lemon juice

-1/2 teaspoon of vanilla extract

Crumb topping

-1/2 cup of all-purpose flour

-1/2 oats

-1/2 cup brown sugar

-1 teaspoon baking powder

-1/4 teaspoon cinnamon

-1/3 cup cold, unsalted butter

-1 pinch of salt


1.) Pre-heat oven to 375 degrees F.

2.) Peel and slice peaches and place in a glass bowl.

3.) Wash blueberries, pat dry and place in bowl with the peaches.

4.) Stir in flour, lemon juice, vanilla extract, sugar, and cinnamon. Let mixture sit while you prepare the topping.

5.) Combine flour, oats, brown sugar, baking powder, cinnamon, and salt in a bowl.

6.) Cut in the butter with a fork until the mixture resembles small crumbs, then set aside.

7.) Pour peach-blueberry mixture into an 8×8 baking dish.

8.) Sprinkle crumb topping evenly over the top.

9.) Bake for 35 minutes or until top is golden brown.

10.) Remove from oven and let rest 10 minutes before serving.

11.) Enjoy your peach-blueberry crisp!
